Mojito:

So I reckoned a few of you would want to know how to make the real deal’ after I did cocktail sorbets. This is taken straight from my French great-grandfather's little red book of cocktails - his naughty pleasure in life. Enjoy!

50 ml white rum
8 mint leaves (mentha nemorosa if possible)
35 ml fresh lime juice
2 small tsp granulated sugar
Sparkling water
Collins glass

Place leaves in the bottom of the glass, add the sugar and the juice. Pile well and squash and scrape and twist the leaves to release the mint extract without mushing it all up. Pour in the rum from a height add 3 ice cubes and stir. Fill the remaining ½ with sparkling water, again from a height.


Decorate with extra leaves and a lime wedge. Drink from a straw.
