Fruit Loaf:

The height of simplicity!

Grease and line 2 x 1 lb loaf tins. Boil together for 5 minutes in a large pan:

1 cup water                                                                                    
1 cup sugar                                                                                       Use the same-sized
1 cup of dried fruit (½ sultanas, ½ raisins)                                          cup level to rim.
And 2 tbsp soft margarine

After boiling - cool - then add the following ingredients, sifted together and mix well:

1 cup self-raising flour
1 cup plain flour
Pinch of salt
½ tsp ground cinnamon
½ tsp mixed spice
½ tsp grated nutmeg
½ tsp bicarbonate of soda


 
Now, add one large lightly beaten egg and mix well. Divide the batter between the 2 tins and sprinkle with chopped walnuts and quartered glacé cherries (approx. 2 oz each). Bake at 180°C (Fan = -20) for 45 minutes to 1 hour.


If it colours too quickly, cover with aluminium foil.
